Ingredients

  • 1 tablespoon olive oil

  • 1 medium onion, diced

  • 2 garlic cloves, minced

  • 1 bunch of carrots (approx 1 lb), peeled and sliced

  • 4 cups vegetable broth

  • 1 teaspoon ground cumin

  • 1/2 teaspoon ground coriander

  • Salt and pepper to taste

  • 1/2 cup coconut milk (optional, for a creamy texture)

  • Fresh cilantro for garnish

Directions

  • Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until softened and translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  • Cook the Carrots: Add the sliced carrots to the pot and stir to coat with the oil, onions, and garlic. Sauté for a couple of minutes to bring out their natural sweetness.
  • Add Spices, then Broth: add the ground cumin, ground coriander, salt, and pepper. Stir in Aromatics! Then pour in the vegetable broth, and bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the carrots are tender.
  • Blend the Soup: Once the carrots are soft, use an immersion blender to blend the soup until smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender and blend until smooth.
  • Add Coconut Milk (Optional): For a creamier texture, stir in the coconut milk. Taste and adjust seasoning as needed.
  • Serve: Ladle the soup into bowls and garnish with freshly chopped cilantro or parsley. Enjoy this vibrant, warming soup with a side of crusty bread or a light salad.

Notes

  • An alternative seasoning idea is to use fresh thyme instead of Cumin and Coriander. Alternatively use heavy cream instead of coconut milk and garnish with parsley instead of Cilantro. Happy cooking!
