Exploring Different Types of Squash

When you think of squash, the creamy, sweet butternut might be the first variety that comes to mind. But here on our farm, we’re growing a diverse array of squash that offers a range of flavours, textures, and culinary possibilities. From the vibrant orange of Lodi squash to the tender, sweet flesh of Honey Patch, and the nutty depth of Acorn squash, each type brings something unique to the table. We invite you to explore these varieties with us and discover new favourites!

Squash Varieties We Grow

  • Summer squash: which includes favourites like zucchini, yellow squash, and patty pan squash, has been a staple in our farm baskets throughout the season. These versatile vegetables are perfect for grilling, sautéing, or baking, adding a light, fresh flavour to any summer meal. Having said that, with the season winding down, our supply of summer squash is rapidly coming to an end.
  • Delicata Squash: Delicata squash is a variety of winter squash with cylindrical fruits that are cream-coloured and striped in green. As its name suggests, it has characteristically a delicate rind. It is also known as peanut squash, Bohemian squash, or sweet potato squash. When I asked our customers what they would like to see us grow, Sarah said “Delicata Squash!”. We listened, we are happy to offer Delicata squash this season! Look for them in your farm baskets this weekend!
  • Honey Patch Squash (AKA 898 Squash): True to its name, Honey Patch squash has a naturally sweet flavour, making it great for both savoury dishes and sweet applications, like a spiced squash pie. It’s like the tiny brother to the Butternut Squash.

    Thanks to Dan Barber, a renowned chef and advocate for sustainable agriculture, collaborated with plant breeder Michael Mazourek from Cornell University to develop the 898 squash. This squash was bred as a response to Barber’s quest for a more flavourful, nutrient-rich variety of butternut squash. Unlike the standard butternut, the 898 squash is smaller, easier to prepare, and packed with natural sweetness and a rich, nutty flavour. The 898 squash also represents a deeper commitment to creating delicious produce through sustainable farming practices.
  • Butternut Squash: A classic favorite with a nutty, sweet flavor and smooth texture, perfect for soups, purees, and roasting.
  • Acorn Squash: With its distinct ridged skin and mild, slightly sweet flesh, acorn squash is fantastic when halved and baked with a drizzle of maple syrup or olive oil. A fall favourite of mine!
  • Lodi Squash: This is a new variety that we are trying this year. It’s a beautiful orange squash is known for its rich flavour and smooth texture. It’s perfect for roasting or turning into a creamy mash. These may not be available in your farm basket as the horses found them first.
