To celebrate this week’s farm basket, we are sharing a delicious and easy Kale Caesar Salad recipe. It’s a delightful twist on the classic Caesar salad, showcasing the robust flavours and crunchy texture of fresh kale.

Ingredients

  • 1 bunch of fresh kale (from your farm basket)

  • 3oz sourdough bread

  • 2 egg yolks

  • 1tsp dijon mustard

  • 3 anchovies, crushed into a paste

  • 1 clove of garlic, minced of finely grated

  • juice of half a lemon

  • 1/2tsp Worcestershire sauce

  • 1 cup vegetable oil

  • 1/4 cup finely grated Parmigiano Reggiano, plus additional for garnish

  • Salt and black pepper to taste

Directions

  • Preheat oven to 350F, cut the bread into rough cubes and bake on a tray until golden brown and crispy.
  • Wash the kale thoroughly and remove the tough stems. Cut into bite sized pieces.
  • In a large bowl combine egg yolks, dijon, anchovies, garlic, Worcestershire sauce, black pepper and lemon juice. while whisking, slowly add the veg oil. if the dressing gets too thick in this stage, add a little bit of water to thin it out. once all the oil is added, whisk in the Parmigiano Reggiano until fully incorporate. add salt and more pepper if needed.
  • In a bowl, toss together kale, and half the Croutons with enough dressing to coat it. plate the salad, top with additional croutons and Parmigiano.
